Know what your food and your staff actually cost

You already have the answer in a drawer: supplier invoices, a rota and a pile of contracts. I turn those into real numbers and show you what to change. All done remotely.

What I work on

Independent hospitality, UK

Food
Every dish costed from your invoices
Staff
True cost of an hour of cover
Paperwork
Contracts, compliance, renewals
Every pound through your till

Four numbers decide whether you make money

?Cost of sales
?Labour
?Overheads
?What is left

If you are guessing at any of them, that is where we start.

What I do

Three things you already have, turned into three things you can use

Your accountant tells you what happened last year. Your till tells you what sold. Neither tells you what a dish makes once the food and the staff are both paid. Take one, or take all three. They run off the same numbers, so a supplier price rise updates everything at once.

01

Your invoices

Every line priced up, every dish and drink costed, and the gross profit on each one. Then where to change a price or a recipe.

  • Costed dishes with yields and allergens
  • Gross profit per item and per menu
  • Re-pricing and menu changes modelled
  • Alerts when key ingredients move

02

Your rota

What an hour really costs once National Insurance, pension and holiday are added. Then labour by hour of the day, not a weekly average.

  • True cost per hour of cover
  • Rota set against when you are actually busy
  • Contracts, handbooks and policies
  • Onboarding and probation packs

03

Your paperwork

Old contracts read properly and gaps flagged now, not at a tribunal. Everything else in one folder with dates against it.

  • Fire, food safety, health and safety
  • Allergen matrix and risk assessments
  • Licence, insurance and lease diary
  • One folder, inspection ready
How it works

Five steps, fixed price, you keep everything

Agreed in writing before I start. Nothing hourly, nothing open ended.

01

You send your figures

Invoices, rota, sales export and whatever paperwork you have, into a shared folder I set up. That is all I need to start.

02

I go through them

Every invoice line priced up and matched to your dishes, whatever suppliers and tills you use. This is the part that used to take weeks.

03

I build the models

Costed dishes, a staff cost model, a compliance folder. Built on your numbers, delivered as files you own.

04

We test changes

Put up a price, drop a shift, switch a supplier. You see what it does to the money before you do it for real.

05

Hand over, or keep going

I train your team online and you run it yourself. Or I keep it up to date every month for a fixed fee. Your call.

About

I have run these businesses

Everything here was built to fix a problem in my own business, before it was ever sold to anyone else. Costing menus, writing rotas, arguing with suppliers and building the systems behind them.

1Person you deal with

No software licence and no lock-in: you get the files and they are yours. This used to need an accountant, an HR consultant and a compliance firm. It now takes me a fraction of the time, which is the only reason a business your size can afford it done properly.

Remote

All done remotely

It is all numbers and paperwork, so I do not need to be in your building to do it. No site visits, and none are needed. Same service wherever in the UK you are.

01

You send the files

Invoices, rota, sales export, paperwork. Into a shared folder.

02

We talk on video

A call at the start, one in the middle, one at the end.

03

I send it back

Files you own, in formats your team already uses.

04

I train your team

Online walkthroughs, plus written steps so it survives staff changes.

No charge, no catch

Send me one invoice and one dish. I will cost it properly.

You get back the true cost of that dish, line by line, and the gross profit you are actually making on it. It takes me under an hour and costs you nothing. If the number surprises you, we can talk about the rest of the menu.

Same on the staff side: photograph the rota on your staff room wall and I will send it back costed, with what each shift is really costing you.
